Romanesco is a sweet, late variety of Fennel producing very big round bulbs of pure white. This variety has excellent resistance to bolting. Florence Fennel is grown for the bulbous swollen plant base which can be used chopped raw in salads, braised as a vegetable or added to delicious winter casseroles. It has a mild aniseed taste and a texture similar to that of celery.
