Chicory, Rossa di Treviso precoce

Long pointed green foliage turns red as the weather gets colder, and roots can be forced to produce paler, tender shoots. To force: lift mature roots, pot them, and cover completely to exclude light. Darkness ensures sweet chicons, while any light turns them bitter. Harvest by slicing across the root top to keep the leaves together.
